One Pan Cheesy Jalapeño Chicken

Ingredients

  • 4 small chicken breasts (make sure the chicken is room temp to help make it moist) watch the thickness as you may need to increase your cook time.

  • 1 teaspoon cumin

  • 1/2 teaspoon chili powder (if you are wanting a mild dish you can take the chili powder out)

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper

  • 1 tablespoon butter

  • 1/2 cup chopped onion (use small amounts as these tasty veggies do have some carbs,)

  • 2 jalapeños, seeded and diced (other peppers can be used if you want a mild dish)

  • 1 teaspoon minced garlic

  • 1/4 cup heavy cream

  • 1/3 cup chicken broth

  • 2 ounces cream cheese

  • 1 cup shredded cheddar cheese (divided)

Directions

  1. Begin by combining the spices. Sprinkle each side of the chicken breast and set aside. (It is a good idea to rub the spice on the chicken to deepen the flavor).

  2. Next, heat a 12-inch skillet over medium heat, add up to 1 tablespoon olive oil.

  3. Sear the chicken just until light brown in the skillet 2-3 minutes on each side until nicely browned, remove from skillet and set aside.

  4. Melt the butter and put the chopped onion, pepper (which ever one you chose), and garlic until tender. Mix in the heavy cream

  5. chicken broth and cream cheese as well and half the shredded cheese. Stir constantly until it starts to thicken.

  6. Add the chicken to the skillet and cover with the remaining cheese. Place a lid on the skillet and let simmer over low for 6-8 minutes.

  7. Serve immediately.

If you have a family or friends that are active and need carbs, it is easy to use rice, and for those of use trying to cut carbs use cauliflower rice.
